Homemade Macoroni & Cheese , from the ground up!

in Children, cooking, Families, Lifestyle, Uncategorized

Today lets talk Cheese.  I talk a lot of cheese, it is one of my most favorite food groups!!!  So let’s talk Mac N Cheese and homemade like pretty much from scratch!!! I went to the work of making homemade macaroni noodles!  It is a little time consuming (ok pretty much a lot of time consuming but it is cold out so I had time!) but the bite that you get from homemade macaroni noodles so much better than the boxed.  Boxed works just fine as well though. I won’t bore you with the details of how to make those, that can be for a new day but they were made! So on to the meat (so to speak for this vegan…….actually I’m not sure if it is actually considered vegan……I’m not real versed on what constitutes a vegan dish) of this hearty, feel good food! I began by  assembling the ingredients for the Roo, no no not that but a ROUX! A roux is typically a...

Wildrice Cranberry YUM YUM Bread

“Good bread is the most fundamentally satisfying of all foods; and good bread with fresh butter, the greatest of feasts.” ― James Beard The bread shown in the above picture is not actually Cranberry Wildrice Loaf, my bad.  Actually, it is my good!  Earlier this fall, I started playing with Wildrice Cranberry bread and figured it was such a GREAT recipe, I’d like to see what it does with blueberries instead of the cranberries.  I remembered to grab the camera and I’d been promising to blog about that recipe so here it is………this time with blueberries in place of the cranberries.  They both work equally well, the cranberries have a little bit more of a tang than the blueberries but both serve a great purpose in our cooking! It all begins with the gathering of the ingredients. Most recipes call for bread flour but I’m not holding anyone to that.  I’ve...

“Boys, I may not know much, but I know chicken poop from chicken salad.” – Lyndon B. Johnson

Tonight we went with Buffalo Chicken On Sourdough.   Again, my husband is not a huge fan of chicken or buffalo sauce,  (Yiphee when he returns we will be blogging about Meat Loaf………)so tonight is my last chance for a few days to get something that’s more of a treat for me.   I’ve decided I’m going to add some avocado and smoked cheese to my sandwich.  I decided to do some research on keeping my avocado from turning brown so I could slice it up ahead of time.  This is what I found out.https://www.huffingtonpost.com/2012/01/10/keeping-avocados-from-turning-brown_n_1196633.html  I’m going to try the pit and add citrus to it too. Also on the subject of Avocados, I often find it difficult in our smaller community to find ripe ones when I want them.  I bought a bag of them several weeks ago at Costco and had decided I wanted to make gauc later...
